According to this post on the Parallels Support Forum - VT-X disabled by firmware update?, Mac Minis with firmware MM11.004B.B00 (the version my machine has) show VT-X working and not working. Parallels works OK, but is supposed to really fly with VT-X ‘on.’ Parallels reports mine is not working…

Simple fix works on intel macs that support VT-x (Most Core Duo’s do). All you have to do it when you have OS X booted simply goto Apple Logo on the menu and put your computer into sleep. Let it sit for 2 seconds and wake it. To confirm that VT-x is working launch Parallels and Goto Parallels Desktop > About Parallels Desktop and at the bottom it should say Virtual Machine Features: and under it should say Virtualization Mode: Intel VT-x. Confirmed working on Intel Mac Mini 1.66Ghz Core Duo, MacBook Pro 2Ghz Core Duo and MacBook any model. I believe this should work with any core duo processor. The speed boost is about 4x to 10x faster than without it depending on the Machine. It’s worth and little hassle. There are some scripts that are floating around to enable it when you boot into OS X but it will slow down OS X.
